Cold temperatures call for warm bowls!
Made a huge batch of this veggie noodle soup to keep me warm all week. It’s such a simple soup, but it’s really packed with flavor and a bit of heat! Won’t be getting sick of this anytime soon!
- 1 red onion
- 7-8 carrots
- 6 cups broth
- 2 Bay leaves
- 1 tbsp oregano
- 1 tbsp salt
- 1 tbsp chili powder
- 2 zucchinis
- 3 cups frozen broccoli
- 1 cup frozen peas
- 3 cup pre cooked noodles
- Dice the onion and cut the carrots into ½ inch pieces. Add them to a pot with the broth. Add in all of the spices. Bring to a boil, then simmer while covered.
- While it's cooking, cut the zucchini into half moons.
- Once the carrots have just started to soften (15 minutes or so) add in the zucchini, broccoli and peas. Cover and cook for about 5-10 more minutes.
- Add the noodles, stir, remove bay leaves and serve. Top with sesame seeds and fresh herbs!
