Veggie Noodle Soup

Cold temperatures call for warm bowls!

Made a huge batch of this veggie noodle soup to keep me warm all week. It’s such a simple soup, but it’s really packed with flavor and a bit of heat! Won’t be getting sick of this anytime soon!

Veggie Noodle Soup

Serves: 4-6

  • 1 red onion
  • 7-8 carrots
  • 6 cups broth
  • 2 Bay leaves
  • 1 tbsp oregano
  • 1 tbsp salt
  • 1 tbsp chili powder
  • 2 zucchinis
  • 3 cups frozen broccoli
  • 1 cup frozen peas
  • 3 cup pre cooked noodles
  1. Dice the onion and cut the carrots into ½ inch pieces. Add them to a pot with the broth. Add in all of the spices. Bring to a boil, then simmer while covered.
  2. While it's cooking, cut the zucchini into half moons.
  3. Once the carrots have just started to soften (15 minutes or so) add in the zucchini, broccoli and peas. Cover and cook for about 5-10 more minutes.
  4. Add the noodles, stir, remove bay leaves and serve. Top with sesame seeds and fresh herbs!
