Sweet Potato Toast Breakfast Bites

Can’t think of a more fun (funner?) way to start the day…

These sweet potato toast breakfast bites are so tasty. Summer’s finest berries, creamy yogurt & Japanese sweet potatoes roasted in coconut oil and cinnamon make for a beautiful early morning harmony!

Sweet Potato Toast Breakfast Bites

Serves: 8-10 Rounds

Ingredients
  • 1 medium sweet potato (I used a Japanese sweet potato)
  • 1 tbsp melted coconut oil
  • 1 tbsp cinnamon
  • ½ cup Greek yogurt
  • 12 banana - sliced
  • 2 strawberries - sliced
  • Handful of blueberries
  • 1 tbsp sliced almonds
  • 1 tbsp coconut flakes
  • 1 tbsp nut butter
  • 1 tsp hemp seeds
  • 1 tsp bee pollen
Instructions
  1. Cut the sweet potato into ¼ inch rounds and toss in melted coconut oil and cinnamon. Roast at 350 degrees for 20 minutes or until cooked through & slightly crispy (flipping halfway through).
  2. Let the potato rounds cool, then spread some of the greek yogurt on each potato round. Distribute the banana, strawberry and blueberries to each round, then top them off with sliced almonds, coconut flakes , bee pollen and hemp seeds!
