Sweet Potato Pumpkin Soup

Hello fall!

What says fall more than sweet potato pumpkin soup? This thick soup is just the thing I want to cozy up with after a chilly day!

Sweet Potato Pumpkin Soup

Serves: 4


  • Soup:
  • 2 cups steamed sweet potatoes
  • 1 can pumpkin puré
  • 2.5 cup veggie broth
  • ¾ cup oat mylk
  • 1 cup vegan shredded cheese
  • 4 cloves
  • ½ tsp nutmeg
  • 1 tbsp salt
  • 5 garlic cloves
  • 2 tbsp onion powder
  • ¼ cup diced sweet potato
  • ¼ cup chickpeas
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sesame seeds
  1. For the soup, blend everything together on the 'soup' setting on a vitamix (or for 6 minutes on high)
  2. For the topping, toss everything but the sesame seeds together and roast at 350 degrees for 15 minutes, shuffling everything half way through. Sprinkle roasted chickpeas, sweet potatoes and sesame on the soup.
