Sweet Potato Nachos

Talk about weekend vibes …

Hello sweet potato nachos! If you’re a sweet potato addict, like me, then this mountain of cheesy crispy veggie goodness is better than classic nachos any day. I made this for my sister when she was visiting & the tray was gone in no time.

Make sure to slice the potatoes nice and thin to allow for ultimate crispiness, then top with your favorite flavors. Serve during a soccer game, as appetizer with your family, or a fun easy dinner!

Sweet Potato Nachos

Serves: 1 tray

  • 2 Large sweet potatoes - cut into fine rounds
  • 2 Tablespoons Olive Oil
  • 1 tsp Salt
  • ½ cup Pepper jack cheese
  • ¼ cup Fresh cilantro
  • 2 Radishes - sliced
  • 1 Tomato - diced
  • 4 Tbsp Salsa verde
  • 1 Mango - diced
  • 1 Avocado - sliced
  • ¼ cup Diced red onion
  • ¼ cup Diced green onion
  • 1 tsp Red pepper flakes
  1. Heat the oven to 400 F.
  2. Toss potatoes with olive oil and salt. Distribute evenly on a baking tray & bake for 15 minutes on one side (or until golden brown), then flip and bake for another 10 minutes. Add pepper jack cheese & bake until the cheese is just melted (a minute or two).
  3. Add all of the toppings listed above & serve immediately.
