Sweet Potato Carrot Smoothie

I knew this was going to be a tasty smoothie, but I didn’t know it was gonna be THIS tasty.

All of the hearty yet sweet flavors in this sweet potato carrot smoothie make this breakfast one of a kind. If you’re new to vegetable-based smoothies, then this is a great place to start. Carrots and sweet potatoes have some natural sweetness and the date gives it an extra something (but if you’re a veggie smoothie pro, get rid of that date!)

I made the this smoothie just a tad smaller than I normally do so that I could swirl some creamy plain yogurt in there. I love this addition because it gives the smoothie a nice texture and additional thickness! You can use greek yogurt or nut-based yogurt if you wish.

Sweet Potato Carrot Smoothie

Serves: 1 smoothie

Ingredients
  • 1 cup nut milk
  • 1 steamed then frozen sweet potato (about 1 cup)
  • 2 medium raw carrots
  • 1 pitted date
  • ¼ cup frozen coconut meat chunks
  • 1 serving collagen peptides powder
  • 1 tsp turmeric

  • Mix-ins
  • Greek yogurt

  • Toppings
  • granola of choice
  • seeds
  • bee pollen
  • pumpkin seed butter
Instructions
  1. Blend it all together on high for 2 minutes. Pour into a glass & layer with plain yogurt then top with granola, seeds, bee pollen and pumpkin seed butter !Sweet Potato Carrot Smoothie
