Sun-Dried Tomato & Herb Goat Cheese Log

A sun-dried tomato & herb goat cheese log! When you’re having a gathering with family and friends, this cheese log made with goat cheese, fresh herbs and sun-dried tomatoes, paired with crackers is the perfect snack for any celebration!

Sun-Dried Tomato & Herb Goat Cheese Log

Serves: 1 log

  • 1 11oz goat cheese log
  • 2 tbsp green onion
  • ½ cup mixed herbs
  • 2 cloves garlic
  • 8 sun-dried tomatoes
  • 1½ tsp lemon zest
  • salt and pepper to taste
  • ½ cup mixed nuts
  1. Chop the green onion, herbs, garlic & sun-dried tomatoes into small pieces & add to a bowl. Remove about 1 tbsp to use in the coating. Add the lemon zest to the bowl & mix all together. Add goat cheese and stir to mix everything together.
  2. Scoop the goat cheese mixture to a large piece of plastic wrap and form into the shape of a log. Wrap in plastic wrap and freeze 20-30 minutes.
  3. Chop the mixed nuts and combine with the reserved herbs & sun-dried tomatoes. Spread them out evenly on a cutting board to be about the width of the cheese log. Place the chilled cheese log in the middle of the nut mixture & start to roll & press nuts on all sides. Once the cheese log is covered in nuts, put it in the refrigerator until it's time to serve.
  4. When ready to serve, remove cheese log from refrigerator 15 minutes early so it can soften. Drizzle with olive oil just and serve with crackers, sliced fruit and vegetables!
