A sun-dried tomato & herb goat cheese log! When you’re having a gathering with family and friends, this cheese log made with goat cheese, fresh herbs and sun-dried tomatoes, paired with crackers is the perfect snack for any celebration!
Serves: 1 log
- 1 11oz goat cheese log
- 2 tbsp green onion
- ½ cup mixed herbs
- 2 cloves garlic
- 8 sun-dried tomatoes
- 1½ tsp lemon zest
- salt and pepper to taste
- ½ cup mixed nuts
- Chop the green onion, herbs, garlic & sun-dried tomatoes into small pieces & add to a bowl. Remove about 1 tbsp to use in the coating. Add the lemon zest to the bowl & mix all together. Add goat cheese and stir to mix everything together.
- Scoop the goat cheese mixture to a large piece of plastic wrap and form into the shape of a log. Wrap in plastic wrap and freeze 20-30 minutes.
- Chop the mixed nuts and combine with the reserved herbs & sun-dried tomatoes. Spread them out evenly on a cutting board to be about the width of the cheese log. Place the chilled cheese log in the middle of the nut mixture & start to roll & press nuts on all sides. Once the cheese log is covered in nuts, put it in the refrigerator until it's time to serve.
- When ready to serve, remove cheese log from refrigerator 15 minutes early so it can soften. Drizzle with olive oil just and serve with crackers, sliced fruit and vegetables!
