This is definitely my new favorite breakfast.
These ‘Everything in the Fridge’ Savory Oats seriously have a little bit of everything in them. Luckily, they’re super versatile, so you can make the with everything in YOUR fridge. If you don’t have pesto, then you can add double as much hummus!
Whatever you topping are, these oats are wonderfully creamy, cheesy and hearty. The perfect breakfast in my books!
- 1 cup rolled oats
- 1½ cup flax milk
- 1 tsp garlic powder
- 1 tsp dried cilantro
- ¼ tsp red pepper flakes
- ½ tsp a little olive oil
- ¼ cup edamame - steamed
- ½ cup parmesan cheese
- handful spinach
- ½ avocado - siced
- 2 tbsp pesto
- 2 tbsp spicy hummus
- 2 tbsp feta
- 2 tsp everything bagel seasoning
- 2 soft boiled eggs
- Cook rolled oats with flax milk, garlic powder, cilantro, red pepper flakes, olive oil and edamame. One it's about half way done, fold in parmesan cheese and spinach.
- Transfer to 2 bowls once the oats have absorbed all of the milk and are nice and gooey.
- Top each with avocado, pesto, spicy hummus, sprouts, feta, everything bagel seasoning and a soft boiled egg.
