Salmon Fried Quinoa

Salmon fried rice with quinoa … Fried quinoa? Salmon fried quinoa? Well this bowl hit the spot tasty, filling and quick to prepare.

Salmon Fried Quinoa

Serves: 2

Ingredients
  • 2 tbsp olive oil
  • 6-8 ounces salmon
  • 2 cups quinoa
  • 1 cup frozen peas
  • 3 tbsp sesame oil
  • 5 tbsp soy sauce
  • 2 eggs
    Toppings
  • 2 fried eggs
  • 1 avocado - halved and sliced
  • 2 tbsp sesame seeds
  • ¼ cup chopped green onions
Instructions
  1. Heat the oil in a large pan & cook the salmon on both sides until it starts to brown. Break it up into small pieces, then add the quinoa, peas and sesame oil. Cook until the peas have thawed. Crack the 2 eggs into the pan & scramble them. Mix everything together, then mix in the soy sauce. Took until quinoa starts to get crispy (add more oil if needed).
  2. Transfer to bowls and top with fried eggs, avocado, sesame seeds and green onions
