Quinoa, Bean & Sweet Potato Veggie Burgers


Quinoa, bean & sweet potato veggie burgers stacked with purple cabbage, avocado & spinach dip. What else could a girl possibly want?! I keep some of these in the freezer for easy weeknight meals!!
These were the perfect way to end a relaxing & gorgeous weekend at home!

Quinoa, Bean & Sweet Potato Veggie Burgers

Serves: 7-10 burgers

  • 2 cups cooked quinoa
  • 2 cups steamed sweet potato
  • 1 can pinto beans, rinsed
  • 1 tsp dried chili flakes
  • 1 tsp cumin
  • 3 tbsp olive oil
  • ¼ nutritional yeast
  • salt and pepper to taste
    Burger fix-ins
  • Avocado
  • Spinach dip (I got mine from Trader Joes)
  • Purple Cabbage
  1. Mix everything together in a large bowl & then form patties (I used a ½ cup measuring cup to make mine).
  2. Stick them in the oven at 375 for 20 minutes, then store them in the fridge or freezer. When you're ready to eat them, cook in a pan oven medium heat with olive oil to crispen
