Here’s one of my favorite weekday dinners!
With a little meal prep (roasting potatoes and brussels sprouts), all you have to do is toss a few ingredients when you get home from work for an easy peasy bowl. The pesto mixed with fish and roasted veg is one of my all time favorite combinations.
- 8ozsmoked salmon
- 1 daikon radish - sliced
- ½ cucumber - sliced
- 1 cup roasted fingerling potatoes
- 1 cup roasted purple brussels
- 2 cups mixed greens
- 4 tbsp basil pesto
- ½ cup spicy microgreens
- Drizzle of olive oil
- 2 tbsp everything bagel seasoning
- Simply toss everything in & divide between 2 bowls.
