Peanut Butter Honey Banana Bread

This loaf is drool worth.

A sweet, gooey and nutty loaf where the only sweetener is banana + honey! This Peanut Butter Honey Banana Bread is the perfect breakfast or snack.

Peanut butter honey banana bread

Serves: 1 loaf

  • ⅓ cup extra-virgin olive oil
  • ½ cup honey (plus more to swirl on top)
  • 2 eggs
  • 1 cup mashed super ripe bananas
  • ¼ cup nut milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 ¾ cups whole wheat flour
  • ¼ cup peanut butter

  • Topping
  • 1 banana
  • 2 tbsp peanut butter
  • 1 tbsp bee pollen ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  1. Whisk together the oil and honey together, then add the eggs. Next, add the bananas and milk. Once combined, add the baking soda, salt, honey and vanilla. Stir in the flour little by little until combined (it's ok if it's a little lumpy).
  2. Pour half into a lined baking tin, then drizzle the peanut butter and honey evenly on top of the batter. Pour the rest of the batter in & top with a sliced banana. Bake at 350 for 55 minutes. Let cool, then drizzle with more peanut butter & sprinkle pollen!
