Ever crave a cookie but want something more nutritious?
Well this is always the case for me and these oatmeal raisin superfood bites are my savior. These sweet gooey chewy bites are incredible delish & they satisfy my sweet tooth.
A few options:
Switch peanut butter for almond or cashew butter
Swap all or half of the raisins for dark chocolate chunks or craisins
Make it vegan and swap honey for maple syrup
Serves: 5-6 balls
- 1 cup dry oats
- ⅓ cup peanut butter
- ¼ cup honey
- ½ cup rasins
- ½ teaspoon vanilla
- ¼ tsp cinnamon
- ½ tsp coconut oil - melted
- pinch sea salt
- In a large bowl, mix everything together with a wooden spoon until gooey and well combined.
- Using an ice cream scooper make balls, then roll them tightly with your palms.
- Store in the fridge for a week or two, or store in freezer for a few months.
