What do you do when you get home from apple and pumpkin picking? Pumpkin apple cobbler … duh. This wholesome dessert has no refined sugar, instead it’s packed with nourishing ingredients like coconut oil, oats, apple cider vinegar and honey.
The soft bottom and the crunchy top tastes oh so good served warm with a scoop of creamy vanilla ice cream… or a scoop of yogurt if you decide to eat it for breakfast (like I did)!
Nourishing Pumpkin Apple Crisp Makes 1 large cobbler INGREDIENTS Fruit Base - 4 apples - chopped into 1/4 inch cubes - 1 can of pumpkin pure - 1/4 cup honey (or maple syrup) - 1 tsp apple cider vinegar - 1 tsp lemon juice - 1 tsp cinnamon - 1 egg Oat Top - 2 cups old fashion oats - 4 tablespoons whole wheat flour - 1/4 cup coconut oil - 1/4 cup honey (or maple syrup) - 1/4 tsp cinnamon - 1/4 tsp cardamon - 1/3 cup whole pecans INSTRUCTIONS 1. Preheat the oven to 350 degrees. Mix all of the fruit base ingredients in a large bowl with a wooden spoon until well combined. Transfer the mixture to a deep 8x8 baking tin (lined with parchment paper or coconut oil) and spread evenly throughout the bottom of the tin. 2. To make the oat top, combine all the ingredients in a large bowl with a wooden spoon until well combined. Transfer the mixture to the baking tin and spread evenly on top of the fruit mixture. 3. Bake for about 45-50 minutes, until the top is golden brown. Enjoy warm!
