No Cooking Tacos

Easiest tacos to make. period.

These no cooking tacos are so simple and easy.. only used the stove to heat the tortillas up! Just chop up a few veggies and stack everything up.

Serves: 5 tacos

Ingredients
  • 5 tortillas
  • 1 avocado
  • juice from ½ lime
  • 1 cup black beans
  • ½ cup diced red onion
  • 1 cup halved cherry tomatoes
  • ¼ cup cashew queso (store bought, or recipe here)
  • ¼ cup chopped cilantro
  • pinch of chipotle salt 🔥💫
Instructions
  1. Smash the avocado and mix in the lime juice.
  2. Add the smashed avocado to each warm tortilla, then add beans, onion, tomato, cashew queso, cilantro and sea salt to each tortilla
