Midsummer Salad with Avocado Herb Dressing

Family gatherings, walks in the forest and sweating in the sauna. Vacation calls for light and refreshing salads that pair well with fish and wine. If you’re having people over, you can hard boiled the eggs, chop the veggies and whiz together the dressing ahead of time & toss everything together minutes before people walk through the door.

Midsummer Salad with Avocado Herb Dressing

Serves: serves 4

Ingredients
  • 4 Hard boiled eggs,
  • 4 shaved carrots
  • 2 apples - chopped
  • 1 red onion - chopped
  • 4 cups of mixed greens & arugula
  • fresh pepper

  • Avocado Herb Dressing
  • 1 avocado
  • 1 cup fresh basil leafs
  • ½ cup chopped chives
  • ¼ cup olive oil,
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lime juice
  • salt and pepper to taste
Instructions
  1. Simply toss all of the salad ingredients (I put the eggs on top of the salad)
  2. Blend all of the dressing ingredients until smooth & drizzle on top of the salad if you're eating it immediately. If it's going to sit out, then put the dressing on the side.
