Matcha Pancakes (V&GF)

Saturdays are for pancakes .. matcha pancakes!!

These matcha pancakes (V&GF) are stacked with homemade cardamom nut butter, coconut yogurt, berries, sliced almonds and hemp seeds. They’re fluffy and so incredibly tasty!

Matcha Pancakes (V&GF)

Serves: serves 2

  • 1 cup oat flour (ground from whole oats)
  • 1 cup almond flour
  • ¾ tbsp baking powder
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • 1½ tbsp matcha
  • 1 ripe banana
  • 1½ tbsp coconut oil
  • ¾ tbsp vanilla extract
  • 1 tbsp maple syrup
  • 1 cup almond milk
  • homemade cardamom nut butter
  • coconut yogurt
  • berries
  • sliced almonds
  • hemp seeds
  1. Mix all the dry ingredients, then stir in the wet ingredients. Scoop ¼ cup of mixture onto a hot oiled pan & cook for 3-4 minutes on each side!
  2. Stack and add toppings!
