Lemon Poppy Seed Pancakes

I love these fresh pancakes! It’s one of my favorite flavor combos.

These fluffy lemon poppy seeds pancakes are gluten free and packed with protein! These are topped with touch of honey skyrr & lemon zest – just delicious!

Lemon Poppy Seed Pancakes

Serves: serves 2

  • 1 cup rolled oats
  • 1 banana
  • 2 eggs
  • Β½ cup egg whites
  • 3 tsp baking powder
  • pinch of salt
  • ΒΌ tsp cinnamon
  • 1 tbsp almond flour
  • 1 tsp lemon zest
  • 1 tbsp poppy seeds
  • Juice of 1 lemon
  • Honey Skyrr (or Greek yogurt)
  • Lemon zest
  1. Blend everything together in a high speed blender & cook about ¼ of batter in a well greased pan over medium low heat for about 2 minutes on each side
  2. Stack the pancakes and top with a dollop of skyrr and a pinch of lemon zest!
