Large Format Cauliflower

I’m in vegetable heaven…

“Large Format Cauliflower” is what we’re choosing to call this, because I told Brian that I was making “cauliflower steaks” for dinner & he said “steak made out of cauliflower sounds absolutely terrible”! So, large format cauliflower it is.

Large Format Cauliflower

Serves: 2

  • 1 head cauliflower
  • 3 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsk dry mustard seed
  • 1 tbsp garlic salt
  • ¼ cup pesto (I used vegan cashew pesto from Trader Joes's)
  • ¼ cup parmesan cheese
  • 1 Avocado
  • 1 cup Summer Pasta Salad
  • 1 tbsp sesame seeds
  1. Cut the cauliflower into 1 inch slices, then coat them in olive oil, paprika, dry mustard and garlic salt. Then roasted low at slow at 350 degrees for an hour, flipping them halfway through (then bump it up to 380 for the last 10 minutes). Let them cool for a bit, then smother with pesto and sprinkle parmesan cheese.
  2. Serve with an avocado with sesame seeds and pasta salad.
