Heirloom Tomato Egg Bake

The easiest meal ever

Heirloom tomato egg bake! Delicious for breakfast + makes for great leftovers all week. I like to heat a square up for breakfast or have it with a side salad for lunch!

Serves: 3-4

  • 12 eggs
  • ½ cup milk (I used nut milk)
  • 1 cup pepper jack cheese
  • 3 cloves garlic
  • salt and pepper to taste
  • 2 heirloom tomatoes ( cut into thick slices)
  • ½ cup arugula
  • 1tbsp poppy seeds
  1. Blend eggs, cup milk, cheese, garlic, salt and pepper together until well combined & transfer to a lined baking dish. Then top with heirloom tomatoes , arugula, salt and poppy seeds. Bake at 350 degrees for about 25 minutes (or until set).
