Summer weekends call for refreshing meals with friends. This salad is a twist on the classic watermelon feta combo, this dish can be served as an entree becuase of the additional flavors and heartiness.
Serves: Serves 4
- 4 cups arugula
- 2 cups cooked quinoa
- 1 small watermelon - cut into ¼ inch cubes
- 2 cups feta - cut into ¼ inch cubes
- 1 cup pit-less olives
- 1 cup fresh basil leafs
- balsamic dressing (equal parts olive oil & balsamic vinegar with some salt and pepper)
- Simply toss all of the ingredients together!
