Easy Turkey Veggie Chili

The ultimate winter food !!

Easy Turkey Veggie Chili is always a good idea when the temp is low and the snow is falling. Eating chili brings me back to skiing with my family & taking long lunch breaks in the wooden lodge. All of the memories packed into this meal make it so special to make and eat. Not much can beat sharing a big pot of chili with your family and friends.
This recipe only takes 30 minutes to make– perfect for a hungry family.
Easy Turkey Veggie Chili

Serves: 5-6

Ingredients
  • 1 Tbsp olive oil
  • 2 lb ground turkey
  • 2 cups onions - chopped
  • 3 cloves garlic - chopped
  • 1 large red pepper - chopped
  • 1 cup celery - chopped
  • Jalapeno - chopped
  • 1 tbsp oregano
  • 2 bay leaves
  • 3 Tbsp chili powder
  • 2 tsp cumin
  • 3 cups canned diced tomatoes
  • 2 cup chicken broth
  • salt and pepper to taste
  • 1 can kidney beans (15 ounce)- drained
  • 1 cup shredded cheese (i used a mexican blend)
    Serving
  • Avocado
  • Dollop of greek yogurt
  • cilantro
  • chopped green onion
Instructions
  1. Heat olive oil in a large pot (over high heat). Add turkey meat and cook until starting to brown (5-7 minutes).
  2. Add the onions, garlic, red pepper, celery, jalapeno, oregano, bay leaves, chili powder and cumin. Stir everything together and cook for 5 min.
  3. Add the tomatoes, chicken broth, salt and pepper. Cook for 15 minutes over medium heat, stirring occasionally.
  4. Add the beans, and cook for another 10 minutes, stirring occasionally. Serve with avocado, greek yogurt, cilantro and green onions.
