Curried Cauliflower Tofu Salad

Adding some India spice to any meal is never a bad idea.

This curried cauliflower tofu salad has so many great flavors and is perfectly comforting. The effort is minimal, all you need is a few key spices.

It makes for a great, light dinner or a packed lunch to bring for work. These golden cauliflower florets will brighten up your day and nourish your body.

Curried Cauliflower Tofu Salad

Serves: 2

Ingredients

  • Curried Cauliflower
  • 1 head cauliflower
  • 1 tbsp turmeric
  • 2 tbsp curry powder
  • 2 tsp salt
  • 3 tbsp olive oil
    Tofu
  • 1 cup cubed tofu
  • 2 tbsp olive oil
  • 2 tbsp 'everything but the bagel' seasoning
    Salad
  • 1 cup cooked quinoa
  • 3 tbsp pepitas
  • 3 tbsp hemp seeds
  • 2 handfuls of mixed greens
    Green Sauce
  • ½ cup olive oil
  • splash of lemon juice
  • garlic clove
  • ½ tsp dried oregano
  • ½ cup fresh cilantro
  • pinch of salt
Instructions
  1. Cut the cauliflower into florets and toss in turmeric, curry powder, salt and olive oil. Spread out evenly on a baking sheet and bake at 400 degrees for 20 min (flipping halfway though).
  2. Toss the tofu in olive oil and everything but the bagel seasoning, then spread out evenly on a baking sheet and bake for 30 min at 350 (flipping halfway though), or until golden brown.
  3. Toss the curried cauliflower with the tofu, quinoa, pepitas, hemp seeds and greens, then divide between 2 bowls.
  4. Finish the salads off with green sauce (simply blend together all of the ingredients).
