Adding some India spice to any meal is never a bad idea.
This curried cauliflower tofu salad has so many great flavors and is perfectly comforting. The effort is minimal, all you need is a few key spices.
It makes for a great, light dinner or a packed lunch to bring for work. These golden cauliflower florets will brighten up your day and nourish your body.

Ingredients
Curried Cauliflower- 1 head cauliflower
- 1 tbsp turmeric
- 2 tbsp curry powder
- 2 tsp salt
- 3 tbsp olive oil
Tofu - 1 cup cubed tofu
- 2 tbsp olive oil
- 2 tbsp 'everything but the bagel' seasoning
Salad - 1 cup cooked quinoa
- 3 tbsp pepitas
- 3 tbsp hemp seeds
- 2 handfuls of mixed greens
Green Sauce - ½ cup olive oil
- splash of lemon juice
- garlic clove
- ½ tsp dried oregano
- ½ cup fresh cilantro
- pinch of salt
Instructions
- Cut the cauliflower into florets and toss in turmeric, curry powder, salt and olive oil. Spread out evenly on a baking sheet and bake at 400 degrees for 20 min (flipping halfway though).
- Toss the tofu in olive oil and everything but the bagel seasoning, then spread out evenly on a baking sheet and bake for 30 min at 350 (flipping halfway though), or until golden brown.
- Toss the curried cauliflower with the tofu, quinoa, pepitas, hemp seeds and greens, then divide between 2 bowls.
- Finish the salads off with green sauce (simply blend together all of the ingredients).
