Curley Eggy Zucchini

This plate is calling my name .. veggies, runny yolk, creamy hummus & crispy bread? Yes please! This breakfast is so easy to put together that I even had time to make it on a weekday. To cut down on time in the kitchen, you can saute your zucchini, then crack the eggs right into them!

Curley Eggy Zucchini

Serves: 1 serving

  • 1 zucchini - spirlaized
  • 1 egg
  • olive oil for sautéing
  • a few cherry tomatoes
  • ground chipotle powder
  • pink himalayan sea salt
  • sesame seeds

  • Sides
  • breakfast chicken links
  • rye toast with spicy hummus
  1. Heat a pan with olive oil over medium heat & add the zucchini. Cooks for a few minutes (until it softens up) and then crack on egg into the zucchini noodles. Remove from heat once the whites are cooked.
  2. Transfer eggs and zucchini to a plate, add tomatoes, sprinkle with ground chipotle powder, pink himalayan sea salt and sesame seeds. East with some breakfast sausage and toast!
