It’s basically a brunch-style pizza!
Burst cherry tomato toast with feta is one of my faves. Super tasty, and even easier to make. Have anybody over for brunch and they’ll love this simple recipe.
- 1 tbsp ghee
- 10-15 cherry tomatoes
- 2 slices of toasted bread
- 2 tbsp feta cheese
- 1 tbsp everything bagel seasoning
- Heat ghee in a pan and add cherry tomatoes with a pinch of salt. Cook until they begin to soften, then press of them with a fork.
- Transfer the burst tomatoes and juice to a toasted slice of bread. Top with feta, herbs and EB seasoning. Eat immediately. (If you're serving a crowd, you can make the tomatoes ahead of time, just don't put the tomatoes on the toast until the last minute).
