Berry Almond Cake Bars

These refined sugar-free treats are healthy enough to eat for breakfast!

Any time I feel like I’m eating dessert for breakfast, I’m a happy girl. These Berry almond cake bars really do the trick. They’re just sweetened with banana, maple syrup and a few dates!

I usually freeze a few every time I make them for a quick and easy snack, or as a travel fuel!

Berry Almond Cake Bars

Serves: 10-15 bars

  • 1 cup whole almond
  • ½ cup maple syrup
  • 1 banana
  • 4 dates
  • ½ cup peanut butter
  • ¼ teaspoon salt
  • ½ teaspoon almond extract
  • 8 tablespoons butter- melted
  • 3 eggs
  • ⅓ cup whole wheat flour
  • ¼ teaspoon baking powder
  • 1 cup berries
  1. Preheat the oven to 350°F.
  2. Put the almonds in the food processor and process until the nuts are finely pulverized. Add the maple syrup, banana, dates, peanut butter salt, and almond extract, and pulse until combine. Add the butter and pulse. Now add eggs and process until thoroughly blended. Add the flour and baking powder and pulse just until incorporated, scraping the bowl once with a rubber spatula to be sure.
  3. Pour the batter into a lined pan and make sure it's spread out evenly. Top the batter with berries & press them in slightly.
  4. Bake for 35 to 40 minutes, until the cake is golden brown on top and a toothpick inserted in the center comes out clean. Let cool completely in the pan on a rack before cutting
