Last week I went apple picking and have so much leftover apple cider … so I cooked it right into my oats this morning with some cinnamon. It was the perfect warm fall breakfast, and is officially my go-to for the season. Plus, cooking with apple cider makes your kitchen smell SO GOOD!
Serves: Serves 1
- ½ cup oats
- ¼ cup apple cider
- ½ tsp cinnamon
- 1 tsp coconut oil
- 1 apple - cut into tiny cubes
- granola chunk (I used a maple pecan granola)
- ¼ tsp chia seeds
- ¼ tsp flax seeds
- ½ tsp honey
- pinch of cinnamon
- Combine the oats and apple cider so that the oats are completely wet. Add them to a small pot over medium heat and stir. Add half of the cinnamon & stir until fully cooked. Transfer it to a bowl.
- Heat the coconut oil over medium heat & add the apples with the rest of the cinnamon. Cook until the apples are golden (about 5-7 minutes). Remove from heat and arrange them on top of the oats. To finish off the bowl add granola, chia seeds, flax seeds, honey and more cinnamon! Enjoy!
