Creamy Mushroom Oats

Creamy, savory and deeeelish!

A big ole bowl of creamy mushroom oats is juuuust what I need after being sick all week.

Creamy Mushroom Oats

Serves: 1 bowl

  • ½ cup mushrooms
  • ¼ cup diced onion
  • 1 tbsp olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • pinch of salt
  • ½ cup oats
  • ½ cup bone broth or veggie broth
  • 2 tbsp nutritional yeast
  • pinch of salt
  • daikon radish slices
  • spicy micro greens
  • everything bagel seasoning
  1. Sauté the mushrooms, onion in the olive oil and salt over medium heat until the mushrooms are soft, then set aside.
  2. Cook the oats with the veggie/bone broth in a small pot over medium heat until the liquid is absorbed, then fold the sautéd mushrooms in. Transfer to a bowl.
  3. Top with nutritional yeast, salt, radishes, micro greens and everything bagel seasoning
