Pancakes are a fan favorite, but have you ever tried making them with only 3 ingredients? Here’s a super clean version of your classic pancakes.
I love getting creative with the toppings, ditch the syrup and try some yogurt, fruit, nuts and seeds!
Serves: 4 mini pancakes
- 1 banana
- 1 egg
- ⅓ cup whole wheat flour
- strawberry ruhbarb yogurt (from Siggis)
- local peach slices
- raspberry compote
- coconut flakes
- goji berries
- Smash the banana with a fork, then mix in the egg and flour until smooth. Cook like an ordinary american pancake (until golden brown on each side).
- Stack them up and top with yogurt and fruits!
