I love carrot cake so much and these little energy balls fill that flavor craving in the best way
I am truly obsessed with these carrot cake bliss balls with a cream cheese frosting. The spices and actual carrots in there plus the vegan cream cheese topping is just so perfect.

Carrot Cake Bliss Balls with Cream Cheese Frosting
Servings: 10 balls
Ingredients
- 1 cup medjool dates – pitted
- 1 cup rolled oats
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- ¼ tsp ground cardamon
- 1 tsp cinnamon
- pinch of salt
- 1 tsp vanilla extract or paste
- ½ cup shredded carrots
- 2 tsp coconut oil
Cream cheese frosting
- 2 tsp coconut oil
- 2 tsp vegan cream cheese
- 1 tsp maple syrup
Instructions
- Add the dates into a food processor & process until paste-like. Add in the rolled oats and process until combined (about 20 seconds). Add the spices & vanilla, process again until combined. Add the carrots & coconut oil and process until combined. Roll into balls & set in the fridge while you make the icing.
- Make the frosting by melting the coconut oil, then whisking it with the remaining ingredients until smooth (an actual whisk or fork is best). Pour a spoonful over each ball & top with a piece of shredded carrots. Set in the fridge for 10 minutes & enjoy
