This is a fall brunch fave around here!
I just love these apple filled pancakes, you get a fluffy pancake on the outside and a soft apple chunk on the inside. All you have to do is dunk a slice of apple into some thick pancake patter & cook like a regular pancake! Autumn heaven if you ask me, so comforting and delightful.

Apple Filled Pancakes
Servings: 2 serving
Ingredients
- 1 cup flour
- 2 tbsp cane sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1¼ cup plant based milk
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 apple
- vegan butter (for the pan)
Toppings
- maple syrup
- granola
Instructions
- Mix all of the dry ingredients in a bowl. In a wet measuring cup, combine the wet ingredients & let them sit for 5 minutes. Combine the wet and dry ingredients until completely smooth.
- Cut the apple lengthwise into disks (about ¼ inch thick) & pop out any seeds. Dunk each apple slice in the batter, making sure it's fully coated & then cook on a buttered pan over medium heat. Flip after about a minute (or until the batter starts to bubble). Repeat for each apple slice. Top with maple syrup & your favorite granola.
