Elevated Store-Bought Ramen

Just a few toppings & broth mix-ins make this ramen bowl feel super boujee

I love simple food and I also love meals that pack in the flavor, and that’s exactly what happening with this elevated store-bought ramen. Spice up that broth to make it feel more rich, give it more depth and body. Then get some fun toppings in there like veggies and marinated tofu, which also make for a more well rounded meal.

I’ve made this lots of times for my family and they just love it. It feels like restaurant food since you’re getting your own special bowl, some like it spicy so I added sriracha for them and other wanted an egg so they boiled a local egg for theirs. It makes for a fun cozy night!

Elevated Store-Bought Ramen

Ingredients

  • 5 packages vegetable ramen packets
  • 1 tbsp sesame oil
  • 3 tbsp miso paste
  • 4 cups vegetable broth
  • ¼ cup soy sauce

Toppings

  • 1 block tofu
  • 2 tbsp sesame oil
  • 2 cloves garlic
  • 2 cups chopped mushrooms
  • 1 red bell pepper
  • 2 tbsp soy sauce
  • 2 spring onions – chopped
  • ¼ cup sesame seeds
  • 2 full sized nori sheets – cut into thin strips
  • ½ cup fresh cilantro – choppes
  • sriracha

Tofu marinade

  • cup soy sauce
  • ¼ cup rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp chili paste
  • 2 cloves garlic

Instructions

  • Start by whisking all of the marinade ingredients together. Chop the tofu into cubes, then let them marinade for 15+ minutes.
  • Prepare the toppings by heating the oil over medium heat in a pan. Add the mushrooms and peppers. Sautee for a few minutes & then add the soy sauce. Cook until nice and soft, then transfer to a bowl. In the same pan, add the tofu (marinade and all) and cook on medium high heat, shuffling them around every few minutes. Once the edges get a bit crispy, removed from heat.
  • Prepare the broth in a pot over high heat. Add the sesame oil and miso paste. Mix together a bit & let that cook for a minute. Add in the soy sauce and mix with miso paste until smooth. Add the broth & ramen seasoning packets in, mix & boil.
  • Prepare the bowls by putting 1 ball/cube of ramen noodles in each bowl, then pour the boiling broth over the noodles in each bowl. Top the bowls off with some boiling water and stir. After about 5 minutes add your toppings ~ mushrooms, peppers, chopped spring onion, sesame seeds, tofu, nori, sriracha, cilantro and a drizzle of sesame oil. I also made some soft boiled local eggs for the family member who wanted.
