Orange Peanut VEggie spring rolls

Here’s a little brightness for your day! These orange peanut veggie spring rolls are an awesome summer meal. The sweetness of the orange mixed with the creamy peanut sauce and the fresh veggies real hits the spot. They’re also much easier to make than you might expect, it’s just stacking a few ingredients in a rice paper wrap!

Ingredients

  • 1 block firm tofu
  • 2 tbsp neutral oil
  • 16 small rice paper wraps
  • ½ tsp sesame oil
  • 1 carrot – shredded
  • ½ cucumber – cut into very thin strips
  • 1 orange – peeled and cut into half moons
  • ½ cup peanuts – crushed
  • ¼ cup black sesame seeds
  • 1 cup spring onion – chopped
  • 1 cup cilantro – chopped

Peanut butter sauce

  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp fresh ginger – minced
  • 1 clove garlic – minced
  • ¼ cup warm water
  • ¼ cup rice vinegar

Instructions

  • Start by whisking together all of the peanut ingredients in a bowl. Set aside.
  • Cut the tofu into small cubes. In a large pan, heat the neutral oil & add the tofu. Cook for about 2 minutes, then shuffle around a few times to brown on all sides. Add in ¼ cup of the peanut sauce to the pan and quickly shuffle the tofu so that the peanut sauce coats it. Cook for another 5 minutes, shuffling often, so that the tofu gets crispy.
  • To assemble the wraps, get all of your veggies ready, chopped and ready to grab. Get a deep plate & a shallow/flat plate. Fill the deep plate with date & spread the sesame oil on the shallow plate. Submerge the rice paper in the water for about 30 second, then transfer the now soft rice paper wrap to the oiled plate. Sprinkle a pinch of sesame seeds on the rice paper wrap, then layer 1 orange slice, a pinch of crushed peanuts, cilantro & green onion. Then add some carrots, cucumber & a few pieces of tofu. Lastly add about 1 tsp of peanut sauce. Carefully fold the rice paper together the way you would close a wrap. Repeat with the remainder of the rice paper! If the rice paper starts sticking to the oiled plate, then add some more sesame oil
