Spicy peanut tofu lettuce cups

These fresh spicy peanut lettuce cups make for such a great easy dinner or they could be a fun starter or side along side a noodle dish, maybe! The creamy spicy peanut dressing binds the crispy tofu to the lettuce cup, making for an awesome well-rounded bite.

And a pro tip – make the leftover ingredients into a little salad in a Tupperware for lunch tomorrow!

Spicy Peanut Tofu Lettuce Cups

Spicy peanut sauce

  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tbsp sesame oil
  • ¼ cup warm water
  • ¼ cup rice vinegar
  • 1 clove garlic – minced
  • 2 tbsp fresh garlic – minced
  • 1 tbsp red pepper flakes

Lettuce wraps

  • 1 package firm tofu
  • 2 tbsp neutral oil
  • 4 cups cauliflower rice (can sub brown rice)
  • salt & pepper to taste
  • 1 small head iceberg lettuce
  • ½ cup peanuts – crushed
  • ½ cup green onion – chopped
  • ½ lime – juiced
  • ¼ cup sesame seeds
  • ¼ cup fresh cilantro – roughly chopped


  • Add all of the ingredients for the sauce to a bowl & whisk together.
  • Press the tofu to remove any excess liquid, then cut into cubes. Heat the neutral oil in a non-stick pan then add the tofu with a pinch of salt and pepper. Cook for about 10 minutes, shuffling the tofu around every few minutes so that all sides start to go golden brown. Add 3 tablespoons of the spicy peanut sauce to the tofu & shuffle so that the sauce coats the tofu. Cook for a few minutes to let the tofu crisp some more. Transfer the tofu to a bowl, and set aside.
  • In the same pan add a bit more oil, then add the cauliflower rice. Add salt and pepper to taste. Cook until the cauliflower starts to get a golden color, then remove from heat.
  • Start to assemble the lettuce wraps by taking leaves of iceberg lettuce and trim down the edges to make little cups. Add about a tbsp of peanut sauce to the bottom of the lettuce wrap, then add some rice and tofu to each cup, drizzle with the peanut sauce. Top each with chopped green onion, chopped cilantro, crushed peanuts, lime juice and sesame seeds.
