Saturdays are for pancakes .. matcha pancakes!!

These matcha pancakes (V&GF) are stacked with nut butter, coconut yogurt, berries, sliced almonds and hemp seeds. They’re fluffy and so incredibly tasty!

Ingredients

  • 1 cup rolled oats
  • 1 cup almond flour
  • ¾ tbsp baking powder
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • tbsp matcha
  • 1 ripe banana
  • tbsp coconut oil
  • ¾ tbsp vanilla extract
  • 1 tbsp maple syrup
  • 1 cup almond milk

Toppings

  • 2 tbsp nut nutter
  • ¼ cup coconut yogurt
  • ¼ cup raspberries
  • 2 tbsp sliced almonds
  • 2 tbsp hemp seeds

Instructions

  • Add all of the pancake ingredients to a blender & blend on high for 1 minute.
  • Scoop 1/4 cup of mixture onto a hot oiled pan & cook for 3-4 minutes on each side.
  • Stack the pancakes and add toppings!
