Rainbow Tex-Mex Salad

Eating the rainbow never looked so good!

Rainbow Tex-Mex salad after a day of walkin’ and bikin’ round town. Does anyone else crave a salad as big after an active day? .. just me?

Rainbow Tex-Mex Salad

Servings: 2 servings


  • 1 cup corn
  • 2 tbsp olive oil
  • 1 tbsp ground chipotle
  • 1 can rinsed black beans
  • 1 avocado - sliced
  • 1/2 english cucumber - diced
  • 5 mini bell peppers - sliced
  • 1/4 red onion - diced
  • 4 cups mixed greens
  • 1/4 cup green goddess dressing (I got mine from trader joes)
  • 1 tbsp black sesame seeds


  • In a pan over medium heat, add the olive oil. Once the oil is hot, add the corn and ground chipotle. Cook for about 5-7 minutes, moving the corn around every minute or so. It should be starting to look a little black in places.
  • Toss the corn with the remaining ingredients & serve! Easy peasy!
