Granola is what makes the world go round!
A bowl of freshly baked ancient grain granola, raspberries, apricots, nut butter and cashew milk before a full day outside! Yesterday I picked up a bag of ancient grain mix at Trader Joes, which includes chia, flax, hemp, red quinoa, amaranth and sprouted buckwheat and millet. Makes for a perfect, quick granola mix in (and even good for overnight oats or sprinkling on some yogurt).
Ancient Grain Granola
Ingredients
- 2 cups oats
- 1 cup ancient grain mix from Trader Joe's (or make your own by mixing chia, flax, hemp, red quinoa, amaranth and sprouted buckwheat and millet)
- 1 cup almonds
- 1/2 cup melted vegan butter can sub oil
- 1/2 cup honey
- 1 tbsp cinnamon
Instructions
- Combine the oats, ancient grains & almonds in a large bowl. In a separate bowl, combine the vegan butter, honey and cinnamon. Pour the liquid mixture over the oats mixture & combine. Lay the mixture out flat & press it down with the back of a spoon or spatula on a baking sheet. Bake for 45 minutes at 350 degrees. Wait until it’s fully cooked to break up!
