Quinoa, bean & sweet potato veggie burgers stacked with purple cabbage, avocado & spinach dip. What else could a girl possibly want?! I keep some of these in the freezer for easy weeknight meals!!
These were the perfect way to end a relaxing & gorgeous weekend at home!
Quinoa, Bean & Sweet Potato Veggie Burgers
Servings: 8 bugers
Ingredients
- 2 cups cooked quinoa
- 2 cups steamed sweet potato
- 1 can pinto beans rinsed
- 1 tsp dried chili flakes
- 1 tsp cumin
- 3 tbsp olive oil
- ¼ cup nutritional yeast
- salt and pepper to taste
Instructions
- Mix everything together in a large bowl & then form patties (I used a 1/2 cup measuring cup to make mine).
