There is no better way to kick off a weekend than with a Stack of Healthy Crepes!
This is a healthier crepe recipe stacked with yogurt & topped with nut butter, bananas, raspberries and homemade granola – the ultimate breakfast
Stack of Healthy Crepes
Servings: 1 stack
Ingredients
Crepe batter
- 1 cup whole wheat flour
- 1½ cup plain soy milk
- 3 tbsp vegan butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- ¼ tsp salt
Filling / topping
- 1 cup thick soy or coconut yogurt
- 1 tbsp nut butter
- ¼ banana - sliced
- 5 raspberries
- handful granola
Instructions
- For the crepes, blend everything together in a blender. Then make the crepes in an oiled pan over medium-low heat by pouring a 3″ circle and cooking until light brown on each side.
- Once all the crepes are made, let them cool then start stacking the crepes with 1-2 tbsp of yogurt between each. Top the stack with more yogurt, nut butter, banana, granola and raspberries.
