This is a healthier crepe recipe stacked with yogurt & topped with nut butter, bananas, raspberries and homemade granola – the ultimate breakfast

Ingredients

Crepe batter

  • 1 cup whole wheat flour
  • cup plain soy milk
  • 3 tbsp vegan butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp salt

Filling / topping

  • 1 cup thick soy or coconut yogurt
  • 1 tbsp nut butter
  • ¼ banana - sliced
  • 5 raspberries
  • handful granola

Instructions

  • For the crepes, blend everything together in a blender. Then make the crepes in an oiled pan over medium-low heat by pouring a 3″ circle and cooking until light brown on each side.
  • Once all the crepes are made, let them cool then start stacking the crepes with 1-2 tbsp of yogurt between each. Top the stack with more yogurt, nut butter, banana, granola and raspberries.
