Honestly, add figs to anything & it’ll be delicious.
Since figs aren’t in season in March I used fig butter in these ‘fig and coconut oats with cardamon’! I put fig butter on anything & everything … toast, yogurt, on a spoonful of peanut butter, etc. Cooking it into some oatmeal was a serious game changer, it gave the oats this unbelievable deep rich sweetness.
Fig and Coconut Oats with Cardamon
Servings: 2 servings
Ingredients
- 1 cup rolled oats
- 1 cup almond milk
- 3 tbsp fig butter
- 1 tbsp coconut oil
- 1 tsp cardamon
Toppings
- 2 tbsp coconut chips
- 2 tbsp chia seeds
- 2 tbsp fig butter
Instructions
- Cook everything in a small pot over low heat, stirring regularly until the oats have absorbed all the liquid. This should take about 15 minutes
- Divide between 2 bowls and top with more fig butter, coconut flakes and chia seeds!
