Add some tasty, rich elements to your avocado toast with these key ingredients.
This tapenade avocado toast, topped with feta and green sauce, has all the goods of an ordinary avocado toast but it also has added creaminess, saltiness and herb-iness (that’s a word, right?)
As with any toast, the fresher the bread the better. This bread came from my local farmers market and I bought the classic german sourdough. Toasting a fresh piece of this pairs beautifully with avocado and is a great base for piling your toast high with toppings.
Doctor up your simple toast for a breakfast that is restaurant brunch worthy!
Tapenade Avocado Toast
Servings: 1 serving
Ingredients
- 2 sliced sourdough bread - toasted
- 2 tbsp tapenade
- ½ avocado -sliced
- 2 tbsp vegan feta
- some sprouts
- 1 tbsp everything but the bagel seasoning
Green sauce (makes extra)
- ½ cup olive oil
- 1 tsp lemon juice
- ½ tsp dried oregano
- ½ cup fresh cilantro
- salt to taste
Instructions
- Spread the tapenade all over the toasted bread, then layer the avocado on. Sprinkle with feta, sprouts and everything bagel seasoning.
- Make the green sauce by blending all of the ingredients until smooth, then drizzle 1-2 tbsp on your toast.
