Curried Cauliflower Tofu Salad

Adding some Curry spice to any meal is never a bad idea.

This curried cauliflower tofu greed salad has so many great flavors and is perfectly comforting. The effort is minimal, all you need is a few key spices.

It makes for a great, simple dinner, a side dish or a packed lunch to bring for work. These golden cauliflower florets will brighten up your day and nourish your body.

Curried cauliflower

  • 1 head cauliflower
  • 1 tbsp turmeric
  • 2 tbsp curry powder
  • 2 tsp salt
  • 3 tbsp olive oil


  • 1 cup tofu - cut into cubes
  • 2 tbsp olive oil
  • 2 tbsp everything bagel seasoning


  • 1 cup cooked quinoa
  • 3 tbsp pepitas
  • 3 tbsp hemp seeds
  • 2 handfuls mixed greens

Green dressing

  • ½ cup olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic
  • ½ tsp dried oregano
  • ½ cup fresh cilantro
  • 1 tsp salt


  • Cut the cauliflower into florets and toss in turmeric, curry powder, salt and olive oil. Spread out evenly on a baking sheet and bake at 400 degrees for 20 min (flipping halfway though).
  • Toss the tofu in olive oil and everything but the bagel seasoning, then spread out evenly on a baking sheet and bake for 30 min at 350 (flipping halfway though), or until golden brown.
  • Toss the curried cauliflower with the tofu, quinoa, pepitas, hemp seeds and greens, then divide between 2 bowls.
  • Finish the salads off with green sauce (simply blend together all of the ingredients).
