Do you have an early flight? An early morning in the office? Or a morning full of commotion?
Rather than leaving your house empty handed, I made this super simple to-go strawberry chia pudding parfait that I can bring anywhere to get my morning going.
If I have a super early flight I might not be hungry at 4:30 AM when I’m still at home, but once I’m settled in on the airplane at 7 AM my stomach is growling. I have been caught at airports, train stations and bus stations super hangry with less than optimal food options
This little bit of preparation the night before will make your unbearably early morning just a little bit better. 🙂
To-Go Strawberry Chia Pudding Parfait
Servings: 1 serving
Ingredients
Chia pudding
- 4 strawberries
- 1 cup plant based milk
- 3 tbsp chia seeds
- ¼ tsp vanilla extract
Parfait
- ½ cup plant based yogurt
- ½ cup dried berries, fresh berries, nut and/or granola
Instructions
- Blend the strawberries with the almond milk for 2 minutes. Transfer the milk to a jar & add chia seeds and vanilla extract. Shake it up every 30 seconds for about 3 minutes & store it in the fridge overnight.
- In the morning, add yogurt, dried berries, fresh berries, nuts or granola
