What should you make when you’re feeling a little lazy and you’ve just come home to your warm sofa from the brisk weather? 5 Ingredient Creamy Pumpkin Spaghetti! This dinner couldn’t be easier to throw together, all you need is:
SPAGHETTI (or PASTA)
PLAIN SOY MILK
VEGAN BUTTER (OR OLIVE OIL)
You simply cook the spaghetti, drain it, then mix all of the other ingredients in. You could double the recipe to feed a crowd or half it to only feed yourself.
If you want to get a little fancier then try some mix ins like: arugula, veggie balls, beyond beef, pine nuts, chunks of roasted squash, etc.
5 Ingredient Creamy Pumpkin Spaghetti
- 12 oz spaghetti
- 1 can pumpkin puree
- ⅓ cup plain soy milk
- ¼ cup nutritional yeast
- 2 tbsp vegan butter
- salt and pepper to taste
- vegan feta cheese
- Cook the spaghetti according to the directions on package.
- Drain the spaghetti & put it back in the pan over medium heat with the vegan butter. Add the pumpkin, nutritional yeast, soy milk, salt and pepper. Stir everything together for about 2 minutes or until everything is combined and warm. Divide between 4 bowls. Optional: Fold in mix-ins.
