Servings: 2 servings (as a side)

Roasted beets

  • 2 beets - I used 1 red + 1 golden
  • 1 tbsp toasted sesame oil
  • 1 tbsp olive oil
  • 1 tsp paprika

Tahini drizzle

  • 1 tbsp tahini
  • 1 tbsp toasted sesame oil

  • 1 tsp sesame seeds
  • 2 tbsp fresh cilantro - roughly chopped

  • Preheat the oven to 400 degrees. Peel and cut the beets into half moons. Toss in toasted sesame oil, olive oil and paprika. Arrange the beets on a baking sheet & bake for 20-30 minutes (or until they just start to get crispy)
  • In a small bowl, make the tahini drizzle by whisking together the tahini and toasted sesame oil.
  • Drizzle the tahini mixture on top of the beets as soon as they come out of the oven. Sprinkle with sesame seeds and cilantro!
