To be honest, I made a whole sheet of these beets… and they were gone shortly after this photo was taken. They are SO ADDICTING!
The make the perfect side or appetizer for dinner or a great for just snacking .. plus, you only need a few ingredients!
Sesame Tahini Beets
Servings: 2 servings (as a side)
Ingredients
Roasted beets
- 2 beets - I used 1 red + 1 golden
- 1 tbsp toasted sesame oil
- 1 tbsp olive oil
- 1 tsp paprika
Tahini drizzle
- 1 tbsp tahini
- 1 tbsp toasted sesame oil
Toppings
- 1 tsp sesame seeds
- 2 tbsp fresh cilantro - roughly chopped
Instructions
- Preheat the oven to 400 degrees. Peel and cut the beets into half moons. Toss in toasted sesame oil, olive oil and paprika. Arrange the beets on a baking sheet & bake for 20-30 minutes (or until they just start to get crispy)
- In a small bowl, make the tahini drizzle by whisking together the tahini and toasted sesame oil.
- Drizzle the tahini mixture on top of the beets as soon as they come out of the oven. Sprinkle with sesame seeds and cilantro!
