Nourishing Pumpkin Apple Crisp

What do you do when you get home from apple and pumpkin picking? Pumpkin apple cobbler … duh. This wholesome dessert has no refined sugar, instead it’s packed with nourishing ingredients like coconut oil, oats, apple cider vinegar and maple syrup.

The soft bottom and the crunchy top tastes oh so good served warm with a scoop of creamy vanilla ice cream… or a scoop of coconut yogurt if you decide to eat it for breakfast (like I did)!

Nourishing Pumpkin Apple Crisp

Ingredients

Fruit base

  • 4 apple - chopped into 1/4 inch cubes
  • 1 can pumpkin puree
  • 1/4 cup maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1/4 cup apple sauce

Oat top

  • 2 cups rolled oats
  • 4 tbsp whole wheat flour
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 tsp cardamon
  • 1/3 cup whole pecans

Instructions

  • Preheat the oven to 350 degrees. Mix all of the fruit base ingredients in a large bowl with a wooden spoon until well combined. Transfer the mixture to a deep 8x8 baking tin (lined with parchment paper or coconut oil) and spread evenly throughout the bottom of the tin.
  • To make the oat top, combine all the ingredients in a large bowl with a wooden spoon until well combined. Transfer the mixture to the baking tin and spread evenly on top of the fruit mixture. Bake for about 45-50 minutes, until the top is golden brown. Enjoy warm!
