Roasted Chickpea Quinoa Salad

The best recipes come to you by accident. I made this salad before leaving for vacation & just used everything I had leftover in my fridge. It’s now become a go-to for me & I throw it together for lunch all the time. So here it is… so simple, but a great lunch.

Roasted Chickpea Quinoa Salad

Course: Main Course, Salad
Servings: 2 servings

Ingredients

  • cup firm tofu - cut into strips
  • cup chickpeas
  • 2 tbsp olive oil
  • ½ tsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 2 cup greens
  • cup quinoa - cooked
  • ½ cup cherry tomatoes - halved

Avocado yogurt dressing

  • ½ avocado
  • cup plain yogurt - I use soy
  • 1 tsp lime juice
  • 1 clove garlic
  • 1 cup fresh cilantro
  • 1 tsp salt
  • 1 tbsp olive oil
  • ¼ cup olive oil

Instructions

  • Preheat the oven to 400 degrees. Toss the raw tofu & chickpeas in olive oil, chipotle powder, garlic powder & salt. Bake for about 20 minutes. Remove from oven.
  • Blend all of the dressing ingredients
  • Toss everything together
