The best recipes come to you by accident. I made this salad before leaving for vacation & just used everything I had leftover in my fridge. It’s now become a go-to for me & I throw it together for lunch all the time. So here it is… so simple, but a great lunch.
Roasted Chickpea Quinoa Salad
Servings: 2 servings
Ingredients
- 1½ cup firm tofu - cut into strips
- ⅓ cup chickpeas
- 2 tbsp olive oil
- ½ tsp chipotle powder
- 1 tsp garlic powder
- 1 tsp salt
- 2 cup greens
- ⅓ cup quinoa - cooked
- ½ cup cherry tomatoes - halved
Avocado yogurt dressing
- ½ avocado
- ⅓ cup plain yogurt - I use soy
- 1 tsp lime juice
- 1 clove garlic
- 1 cup fresh cilantro
- 1 tsp salt
- 1 tbsp olive oil
- ¼ cup olive oil
Instructions
- Preheat the oven to 400 degrees. Toss the raw tofu & chickpeas in olive oil, chipotle powder, garlic powder & salt. Bake for about 20 minutes. Remove from oven.
- Blend all of the dressing ingredients
- Toss everything together
