Farmers Market Salad

Here’s an easy peasy salad for ya! Roasted sweet potato, figs, walnut salad with wild rice and tahini dressing. MmmmMmm.
Made it up on the fly while I was trying to clean out my fridge… this is how all of the best salads are born. Now it’s a go-to!

Farmers Market Salad

Course: Main Course, Side Dish
Servings: 2 servings


  • 2 cup fresh greens
  • 1 cup cooked wild rice
  • 4 dried figs - cut into slices
  • ½ cup walnuts - chopped
  • 2 whole roasted sweet potatoes - cut into slices
  • 2 tbsp vegan parmesan


  • ½ cup tahini
  • ½ cup warm water
  • 1 tsp salt
  • 1 tsp lemon juice
  • 1 tsp garlic powder


  • Toss all salad ingredients. Mix all dressing ingredients well & drizzle on top of salad.
